Maison Ilan is a micro-négociant winery located in Nuits-Saint-Georges. We produce limited lots of red Burgundy, dedicated to Premier and Grand Crus. In the cellar, we focus on traditional Burgundian techniques which may provide more terroir transparency, such as the use of open-top wooden tanks, low percentages of new oak barrels, and native yeasts.
We also practice manual sorting on a fixed table, low to no pump usage, no chemical additions besides light sulfur, infrequent pigeage regime, low to no cooper variation within lots along with other low impact methods with the goal being a more restrained and elegant wine.
11.5 barrels in total were produced for our inaugural vintage, 2009.
Adjustments for 2010 include moving over to 100% open-top wooden tanks by Marc Grenier, new oak percentage over the complete lineup reduced to 0%, and no pump usage.
